If I were to choose a single season throughout the year to designate as my favorite, it would undoubtedly be summer. Pool parties, picnics, and extended days at the beach are all part of it. I relish the warm sunshine on my face, submerging my head underwater, and then enjoying cold fruit as the water trickles down my skin. Summer is truly the best.

The availability of fresh seasonal fruit significantly contributes to my affection for this time of year. Strawberries, blueberries, blackberries, watermelon, peaches, grapes, and pineapple are all delightful on their own, but it can also be enjoyable to discover inventive ways to present them when hosting guests. These fruit kebabs serve as the ideal solution.

By simply arranging the fruits on bamboo skewers and pairing them with a creamy chocolate dipping sauce that takes only 10 minutes to prepare, you will leave everyone with the impression that you are an accomplished host.

The dipping sauce consists of a straightforward blend of raw cashews, cocoa powder, pure maple syrup, vanilla, non-dairy milk, and a hint of sea salt. Blending these ingredients results in a rich chocolate cream that you will need to resist consuming before your guests arrive.

I opted for a combination of my favorite fruits (strawberries, pineapple, grapes, and blueberries), but you are welcome to use any varieties you prefer. If you are feeling indulgent, you could even incorporate small pieces of vanilla cake onto the skewers, but the fruit alone is sufficiently sweet and satisfying.

In total, the kebabs require less than 20 minutes to prepare and can be kept for several hours if you wish to make them ahead of time. They are the perfect refreshing treat for a warm summer day!

Notes
*Soak cashews in a large bowl filled with several inches of water for at least 6 hours or overnight. For a quicker method, bring a pot of water to a boil, remove it from the heat, then add the cashews and let them soak for 30 minutes.



Ingredients:

* 2 ripe bananas, peeled
* 6 slices pound cake (1/2 inch thick cut into 1 inch squares)
* 2 medium ripe nectarines or peaches
* 6 whole strawberries, stemmed
* 3/4 cup semisweet chocolate chips
* 1 5-ounce can evaporated milk (2/3 cup)
* 2/3 cup sugar
* 1/4 cup butter or margarine

INSTRUCTIONS:
To prepare sauce, melt chocolate chips and butter or margarine over low heat in a small saucepan. Add in the sugar and slowly add the evaporated milk. Bring mixture to a boil,
reduce heat and stir for 8 minutes. Remove and set aside.
Remove seeds from peaches or nectarines and cut the fruit into wedges. Slice the bananas and pound cake into 1-inch squares. Thread the peaches or nectarines, cake, and bananas alternately onto six 12-inch-long skewers. To each skewer add one strawberry.

INGREDIENTS
  • 1/3 cup packed brown sugar or maple syrup
  • Juice of 2 oranges
  • 2 nectarines or peaches, halved and pitted
  • 3 plums, halved and pitted
  • 2 bananas, halved lengthwise
  • 1 pineapple, peeled, cored, and cut into chunks
  • Lemon Zabaglione
  • Fresh mint leaves, for garnish

PREPARATION

Prepare a medium-hot fire (425° to 450°F) in a wood-fired grill.
Stir the sugar into the orange juice until dissolved. Brush the cut fruit with the sugar mixture.
Grill the fruit, cut side down, for about 5 minutes, or until the fruit is slightly soft and well marked. Move to indirect heat and continue to cook to the desired softness. Remove from the heat and set aside to cool.
Slice the fruit and keep each kind in a separate bowl. Let stand at room temperature for 30 minutes to allow flavors to mix.

  • 1/3 ripe pineapple, peeled, cored, and cut into 1-inch pieces
  • 2 firm ripe peaches or nectarines
  • 1 Anjou pear
  • 1 tablespoon oil
  • Freshly ground black pepper
  • 1/3 pound crumbled Gorgonzola cheese
  • 15 leaves fresh basil, chopped
  • 10 sprigs Italian flat leaf parsley, chopped
  • 2 cups arugula leaves, chopped
  • 1 tablespoon olive oil (optional)
Grilled Fruit Recipe Instructions 

 Preheat an outdoor grill for medium heat and lightly oil grate. Cut the peaches in half, removing the pit. Keeping the skin on the pear, cut straight down one side, then the opposite, leaving the core. Cut the two remaining sides off of the core (the pieces will not be even). Brush a small amount of oil on the pineapple, peaches, and pear to prevent them from sticking to the grill. Sprinkle all sides of the fruit with pepper. Place the fruit flesh side down on the grill and cook for 10 minutes, turning as needed, until soft and caramelized. When the fruit is cooked, remove from the grill and place on a serving platter. Sprinkle with crumbled cheese and top with chopped basil, parsley and arugula. Drizzle with olive oil if desired. Serve the grilled fruit hot...enjoy it !

  • 1 cup soft cream cheese with honey and nuts 
  • 1 tablespoon vegetable oil
Directions
Preheat a grill for medium-high heat.
Brush peaches with a light coating of oil. Place pit side down onto the grill. Grill for 5 minutes, or until the surfaces have nice grill marks. Turn the peaches over, and drizzle with a bit of honey. Place a dollop of the cream cheese spread in the place where the pit was. Grill for 2 to 3 more minutes, or until the filling is warm.
