If I were to choose a single season throughout the year to designate as my favorite, it would undoubtedly be summer. Pool parties, picnics, and extended days at the beach are all part of it. I relish the warm sunshine on my face, submerging my head underwater, and then enjoying cold fruit as the water trickles down my skin. Summer is truly the best.

The availability of fresh seasonal fruit significantly contributes to my affection for this time of year. Strawberries, blueberries, blackberries, watermelon, peaches, grapes, and pineapple are all delightful on their own, but it can also be enjoyable to discover inventive ways to present them when hosting guests. These fruit kebabs serve as the ideal solution.

By simply arranging the fruits on bamboo skewers and pairing them with a creamy chocolate dipping sauce that takes only 10 minutes to prepare, you will leave everyone with the impression that you are an accomplished host.

The dipping sauce consists of a straightforward blend of raw cashews, cocoa powder, pure maple syrup, vanilla, non-dairy milk, and a hint of sea salt. Blending these ingredients results in a rich chocolate cream that you will need to resist consuming before your guests arrive.

I opted for a combination of my favorite fruits (strawberries, pineapple, grapes, and blueberries), but you are welcome to use any varieties you prefer. If you are feeling indulgent, you could even incorporate small pieces of vanilla cake onto the skewers, but the fruit alone is sufficiently sweet and satisfying.

In total, the kebabs require less than 20 minutes to prepare and can be kept for several hours if you wish to make them ahead of time. They are the perfect refreshing treat for a warm summer day!

Notes
*Soak cashews in a large bowl filled with several inches of water for at least 6 hours or overnight. For a quicker method, bring a pot of water to a boil, remove it from the heat, then add the cashews and let them soak for 30 minutes.



Ingredients:

* 2 ripe bananas, peeled
* 6 slices pound cake (1/2 inch thick cut into 1 inch squares)
* 2 medium ripe nectarines or peaches
* 6 whole strawberries, stemmed
* 3/4 cup semisweet chocolate chips
* 1 5-ounce can evaporated milk (2/3 cup)
* 2/3 cup sugar
* 1/4 cup butter or margarine

INSTRUCTIONS:
To prepare sauce, melt chocolate chips and butter or margarine over low heat in a small saucepan. Add in the sugar and slowly add the evaporated milk. Bring mixture to a boil,
reduce heat and stir for 8 minutes. Remove and set aside.
Remove seeds from peaches or nectarines and cut the fruit into wedges. Slice the bananas and pound cake into 1-inch squares. Thread the peaches or nectarines, cake, and bananas alternately onto six 12-inch-long skewers. To each skewer add one strawberry.
Grill each kebab about 5 minutes or until cake is lightly browned, making sure to turn only once. To serve, push contents from skewers onto dessert plates and lightly drizzle with warm chocolate sauce. The grilled fruit recipe is ready...enjoy the kebab !

  • 1/3 ripe pineapple, peeled, cored, and cut into 1-inch pieces
  • 2 firm ripe peaches or nectarines
  • 1 Anjou pear
  • 1 tablespoon oil
  • Freshly ground black pepper
  • 1/3 pound crumbled Gorgonzola cheese
  • 15 leaves fresh basil, chopped
  • 10 sprigs Italian flat leaf parsley, chopped
  • 2 cups arugula leaves, chopped
  • 1 tablespoon olive oil (optional)
Grilled Fruit Recipe Instructions 

 Preheat an outdoor grill for medium heat and lightly oil grate. Cut the peaches in half, removing the pit. Keeping the skin on the pear, cut straight down one side, then the opposite, leaving the core. Cut the two remaining sides off of the core (the pieces will not be even). Brush a small amount of oil on the pineapple, peaches, and pear to prevent them from sticking to the grill. Sprinkle all sides of the fruit with pepper. Place the fruit flesh side down on the grill and cook for 10 minutes, turning as needed, until soft and caramelized. When the fruit is cooked, remove from the grill and place on a serving platter. Sprinkle with crumbled cheese and top with chopped basil, parsley and arugula. Drizzle with olive oil if desired. Serve the grilled fruit hot...enjoy it !

  • 4 peaches, halved and pitted 
  • 2 tablespoons clover honey 
  • 1 cup soft cream cheese with honey and nuts 
  • 1 tablespoon vegetable oil
Directions
Preheat a grill for medium-high heat.
Brush peaches with a light coating of oil. Place pit side down onto the grill. Grill for 5 minutes, or until the surfaces have nice grill marks. Turn the peaches over, and drizzle with a bit of honey. Place a dollop of the cream cheese spread in the place where the pit was. Grill for 2 to 3 more minutes, or until the filling is warm. * 4 oz. cream cheese
* 1 tbsp honey
* 1 sliced red pear
* 1 sliced red apple
* 1/2 sliced cantaloupe
* 2 sliced bananas
* 1/4 cup melted butter

Grilled Fruit Recipe Instructions:

Dip In a small bowl, combine softened cream cheese and honey. Set aside.
Glaze In a small bowl, combine melted butter and honey. Set aside.
Slice pear, apple, cantaloupe and bananas into large pieces.
In a large bowl, combine fruit and desired amount of glaze.
Toss gently.
Place fruit slices onto a medium grill, and grill fruit until grill marks appear, about one minute.
Remove from grill and place on a serving platter.

Grilled Fruit Recipe Ingredients

* Homemade or ready made pizza dough (NOT crust!) split into 6 sections and formed into disks
* 1 pint fresh strawberries
* 1 pineapple, cleaned
* 2 kiwi fruits peeled
* 1 jar (14-oz. size) strawberry preserves
* 1 package (16-oz. size) chocolate or white chocolate morsels

Grilled Fruit Recipe Instructions:

Cut fruit into pieces large enough so that they won't fall through the bars of the grill; or place a piece of aluminum foil over grill.
Spray the fruit lightly with cooking spray or EVOO.
Grill fruit until grill marks appear.
Set fruit aside and prepare pizza crust for the grill.
Spray the disks of pizza dough with cooking spray or olive oil and place on the grill.
Cook dough for 3-5 minutes.
Flip over, and spread with strawberry jam.
Add chocolate chunks and grilled fruit.
Continue to grill until chocolate melts and pizza is heated through, about 4-5 minutes.
Serve immediately. Enjoy !

* 2 apples, cored and cut into &nbsp1" pieces
* 2 bananas, peeled and cut into 1" pieces
* 2 peaches, pitted and cut into 1" pieces
* 4 kiwis, peeled and sliced into 1" thick sections
* 4 1" slices fresh pineapple, peeled, cored and cut into 1" pieces (or 1 can pineapple chunks)
* 16 strawberries, washed and hulled

In a small bowl, combine oil, sugar, lime juice, cinnamon and mint; mix until sugar is dissolved.
If you are using wooden skewers, soak them in water for about 10 minutes to prevent them from burning.

Honey Glaze:
  • 8 tbsp (1 stick) unsalted butter, melted
  • 1/4 cup Honey
  • 3 tbsp Freshly squeezed lime juice (from 1 to 2 limes)
Fruit:
  • 2 Bananas
  • 2 Peaches
  • 2 Nectarines
  • 2 Plums
  • 1 Pineapple

1. Stir together all of the honey glaze ingredients until smooth.
2. For grilled bananas: Peel the bananas, and slice in half crosswise and then lengthwise. (you will have 4 pieces, each about 4 inches long and 1/2 inch thick.) Add a pinch of ground cinnamon and/or 2 tablespoons of dark rum to the honey glaze. Using a pastry brush, coat the banana pieces with the glaze. Grill over direct medium heat for 6-8 min., turning gently, until light brown.
3. For grilled peaches, nectarines, plums: halve the fruit and remove the pits. Toss the fruit gently in a bowl with the honey glaze. Grill, cut side down, over direct medium heat for 10-12 minutes, turning after 7 or 8 min.
4. For grilled pineapple: Cut off the top and the peel. Slice the fruit into 3/4 inch-thick rounds. Add 2 Tbsp of dark rum to the honey glaze. Using a pastry brush, coat both sides of each slice with the glaze. Grill over direct medium heat for 12 to 15 min., turning once halfway through. Ingredients:

* 5-7 ripe pears
* 3 tablespoons butter, unsalted
* 3 tablespoons apple or pear juice
* 3 tablespoons brown sugar
* 1/2 teaspoon cinnamon

* 1/8 teaspoons ground cloves

INSTRUCTIONS:
Place all ingredients, except pears, in a small saucepan.
Simmer until butter and brown sugar have melted together.
Preheat grill for medium heat. Peel and core pears making sure to leave stems on. Stand pears upright in a skillet and place on grill. Cool for 15-20 minutes over direct medium heat, while continually basting throughout cooking process.

* 2 large ripe pears
* 1/2 cup white wine
* 1 tablespoon sugar
